I officially started a new, healthy lifestyle. So I needed some new recipes. As I also started to workout, what I was looking for was healthy meals with protein. This is how I found this amazing recipe which I changed a little, here is my version of roasted bell peppers stuffed with cottage cheese:
1-2 bell peppers
2 cups cottage cheese
1 small onion
olives and spices for decoration
First, I cut a small onion (half if too big) and fried it in a hot frying pan using olive oil. Then I transfered it in a bowl to cool down. In the meantime, I washed and cut the bell peppers in half- to be honest, 1 pepper should be enough, but if you are really hungry, 2 could work as well-then cleaned out the insides. In the bowl I mixed the onion, cottage cheese, salt and pepper and spooned the mixture in the peppers. I put it in the oven, preheated 180 Celsius/ 360Fahrenheit for 20-30minutes. After that you can also sprinkle some shredded cheese on top and put it back for an additional 5 minutes. It didn’t fit my diet so I skipped this step 🙂 I put the peppers on a plate and decorated them with sliced olives and a salad mix (organic radish, kale, arugula, buckwheat and sunflower).
